M's Summer Minis...

My oh my but I have been a busy little bee as of late...between teaching, my new job as web editor and writer for Ottawa Life Magazine (so excited about this one...I even get my own office!) and doing general summer stuff (cottaging, roaming in the sun etc.) it's been a crazy few days...hence my absence from the blogosphere...but I finally have some "me" time this morning so I decided to share an amazing recipe with you all that I briefly mentioned here...while we were in North Bay a few weekends ago, my good friend Marisa made these amazing mini-burgers so I just had to have (and share) the recipe...I highly recommend eating these minis outside, with a cold glass of lemonade (or whatever other summer drink strikes your fancy)...either way, this meal is a guaranteed taste sensation for any summer party or event...enjoy...

1 lb ground chicken
1 lb ground turkey
1 egg
half onion grated
2 cloves garlic, minced
1/3 cup grated parmesan cheese
1/4 dry bread crumbs
2 tbsp chopped fresh basil
1/4 each salt and pepper

 mini focaccia buns
sliced bocconcini cheese
 tomato sliced
large basil leaves
BBQ sauce or any other fixing of your choice

How to:
Whisk together egg, 1tbsp water, onion, garlic, cheese, bread crumbs, basil, salt and pepper; mix in chicken and turkey.
Shape into mini patties that will fit into your mini focaccia buns.
Grill on medium heat, turning once, until no longer rink inside or digital thermometer registers 165F (about 15 minutes).
Serve burgers in buns with bocconcini, tomato and basil leaves and any other fixings you like!
Voila, some very yummy mini summer burgers for you to enjoy!

And there you have it an easy and yummy summer am I ever going to miss eating outside and enjoying the sunshine once the fall hits the city...but then again I also enjoy the comfort of fall with all its pretty colours and over-the-knee boots...okay getting a little ahead of myself, we still have plenty of sun left in this season yet...until next time, enjoy the sunshine everyone...
