Summer Fresh Pesto Pasta...

Summer is a undoubtably a time for fun in the sun, relaxation by a body of water (lake, sea, pool...whatever) skirts and shorts, but most of all it's for those lovely lazy evenings where you get to enjoy a meal outside (patio, beach, balcony, terrace...whatever) with friends, old and new, and family...this is definitely one of my favourite things in the summer~ those simple evenings where you can leave your cares and stresses aside and enjoy the company of loved ones over a good meal and lovely atmosphere...For me personally, summer is also a time where I am most inspired to try new recipes and goodies, which is exactly what I did last night...after a weekend spent in the country and no time for shopping, I decided to pull whatever we had in the fridge (within reason of course) and put together a little summer fresh pesto pasta, which was even yummier served outside in the evening....it turned out really well so I am sharing my recipe here with you all...enjoy...
1 tbsp olive oil
3 tomatoes, chopped
3-4 cloves garlic, chopped
1 medium onion, chopped
2 tbsp regular pesto
2 tbsp sun-dried tomato pesto
1 tsp basil
1 tsp savoury seasoning
1/2 tbsp thyme
salt & pepper to taste
1 cup spinach linguine
parmesan cheese, freshly grated to sprinkle on top
How to:
Saute onion and garlic with olive oil until onion is clear.
Add tomatoes and simmer for about 8-10 minutes
Add pesto and stir, let simmer for a few minutes until all ingredients are mixed.
Add spices, salt and pepper to taste.
Cook your pasta until done.
Serve your pasta in bowl or plate with the linguini first and top it off with the pasta sauce.
You can ad a little bit of chilli peppers to add spice to your pasta.
Serve with freshly grated parmesan on top and some freshly ground pepper to taste.
Enjoy your meal outside with a cool glass of mineral water garnished with lime and lemon or some chilled white wine...

This looks delicious. I love the idea of mixing basil pesto and sun-dried tomato pesto, and the option of chili peppers for kick. I'm the opposite - I love all the fresh produce in summer but I hate being inside cooking when it's so nice outside!
